Easy Pumpkin Cookies

Once fall hits, I typically start baking a lot more and putting pumpkin in everything. Last week I made a batch of pumpkin chocolate chip cookies, and think I finally found a winning recipe. I took a batch to share at class on Saturday, and everyone ate them up. I told them I would share the recipe, so here goes:

Easy Pumpkin Chocolate Chip Cookies

Ingredients:
1 1/2 C. sugar 
1/2 C. oil
1/4 C. apple sauce
1 egg
1 C. pumpkin puree
2 1/2 C. flour
1 t. baking powder
1 t. baking soda
1/2 t. salt
1 t. cinnamon
1 t. vanilla
1 1/2 c. chocolate chips (we used minis this time, but dark chocolate are good too!)
1 c. oats (optional)

Mix all ingredients together, and drop by the teaspoonful on a baking sheet. Bake at 400' for 13 minutes. Bon Appetit!
