Perfect Afternoon Pick-me-up!

Last week I stumbled upon a recipe from this cute blog that is just too good not to share: No-Bake Energy Bites! They were super easy to make, kid-friendly, no-bake, and heart healthy! One of my favorite things to do with the kids is COOK, but when it's 100+ degrees outside, it's hard to turn that oven on. This was a perfect summer activity and a great afternoon pick-me-up. Here it is (with my tweaks)

No Bake Energy Bites

1 C. oatmeal

1/2 C. creamy peanut butter

1/3 C. honey

1/2 C. flaxseed meal

1/2 C. dark chocolate chips

1 t. vanilla

Mix everything in medium bowl. Let chill in the refrigerator for half hour, and then roll into balls. Can be stored and kept in the refrigerator for 1 week. (if they last that long!)  

I've made these twice in one week, sent some to my print shop as a thank you, and packaged some up for some new mommy friends for an afternoon pick-me-up. These also go quite nicely with a cup of coffee!
